First, mix all the ingredients for the batter together; the batter should remain runny.
Heat the oil in a deep frying pan (to approx. 175–190°C) and pour the batter into the oil in a spiral shape using a funnel.
Fry the fritters floating in the oil until golden brown on both sides.
Remove the fritters from the pan, sprinkle with icing sugar and serve whilst still hot.
They go well with cranberry jam, apple compote or apple purée.
