Ein bisschen Latsch-Martell für Zuhause💚

🥰Vinschger Paarl🥰

220 g Roggenmehl
200 ml Wasser 30 °C
5 g Hefe
500 g Roggenmehl
280 g Weizenmehl
700 ml Wasser 30 °C
20 g Hefe
20 g Salz
10 g Fenchel
5 g Kümmel
evtl. 5 g Brotklee

Hefe im warmen Wasser auflösen. Alle Zutaten für den Vorteig für 5 min sorgfältig vermengen und anschließend 5 min kräftig durchkneten. Den Teig 1 Stunde zugedeckt bei ca. 30 °C ruhen lassen. Vorteig und alle weiteren Zutaten zu einem weichen Teig verrühren, mit Roggenmehl bestäuben und 10-15 min zugedeckt ruhen lassen. Teigballen zu 80-100 g formen, als Paar oder auch einzeln auf ein mit Backpapier belegtes Blech legen und weitere 30-45 min ruhen lassen. Bei 220 °C im Ofen bei Ober- und Unterhitze ca. 45 min ausbacken.
