Peel the apples, remove the cores and cut into 1–2 cm thick slices. Drizzle with lemon juice and leave to stand for 10 minutes. Batter: Put the flour in a bowl and stir in the milk or beer until smooth. Stir in the egg yolk, vanilla sugar and oil. Beat the egg whites with the salt until frothy, then beat in the sugar until stiff peaks form and fold into the batter.
Finishing touches: Dip the apple slices into the batter using a fork and fry in hot oil until light brown. Mix the sugar with the cinnamon and toss the apple fritters in the mixture. Garnish the apple fritters with the raspberries and lemon balm and serve.
