Muas in Schnalstal style

Place water, milk and salt in a traditional Muas pan and heat slowly. Before the liquid begins to boil, gradually whisk in the cornmeal. Let it simmer gently over low heat for about 20 minutes. A tasty crust forms at the bottom of the pan, known as “Scharren”.
Remove from heat, let cool slightly and drizzle with melted butter. Muas is traditionally eaten directly from the pan with a special spoon, often placed in the center of the table.

1 litre fresh milk
50 ml water
2 tsp salt
70 g cornmeal (polenta)
50 g butter
