Schöpsernes from the Marzoner Alm mountain pasture

Season the meat with salt and pepper and, using a flat pan, sear in hot oil. Add the chopped onions and garlic, briefly fry, then cover with the red wine. Add the herbs and some water and bake in the oven for approximately 90 minutes at 175°C. Remove from the oven and thicken the sauce with the cornflour. Bacon or bread dumplings are a great accompaniment to this dish.
Ingredients:
(serves 4 persons)

- Oil for searing
- 1 kg mutton (Schöpsernes)
- 200 g onions
- 3-4 cloves of garlic
- Fresh herbs such as thyme, marjoram and rosemary
- ca. 200 ml red wine
- Salt, pepper
- Cornflour (e.g. Maizena)
