The village dairy in the heart of Prad am Stilfserjoch can look back on over 100 years of history. When it was threatened with closure in autumn 2018, the Obervinschgau Citizens’ Cooperative stepped in to save it. The cooperative is committed to the ecological and economic sustainability of the Upper Vinschgau region, and a dairy is a key pillar for any rural area.

Preserving this small regional structure—with its high-quality jobs and local value creation—is a central motivation behind the cooperative’s commitment. Equally important is the future outlook it offers to local farms and the preservation of regional expertise. Driven by this vision and in collaboration with farmers, professionals, and with the support of the local community—who showed their trust in the project and participated eagerly in the pre-sale—the Organic Village Dairy was launched in spring 2019.

Aware that this endeavor would be a major challenge, it was clear from the beginning that high-quality organic cheese would be made from premium milk.

Thus, quality, sustainability, and cooperation are core values in the work of the Organic Village Dairy.
