Smoked ham dumplings with spelt flour

Finely dice the smoked ham. Sweat the onions in butter in a frying pan and then add to the breadcrumbs. Stir eggs into the milk. Combine with the spelt flour, chives and breadcrumbs. Knead them all into a dumpling dough. Shape the mixture into dumplings and then cook in boiling salted water for 15 minutes.
Arrange the smoked ham dumplings on coleslaw.
  • 100 g South Tyrolean smoked ham
  • 50 g onions, finely diced
  • 20 g butter
  • 150 g breadcrumbs (Knödelbrot)
  • 2 eggs
  • 100 ml milk
  • 40 g spelt flour
  • 2 tbsps chives
  • salt
